Pizza Casserole
I make this in 2 serving portions and freeze it.

(canned, drained, chopped)

Pre-Prep

Brown the sausage in a skillet over medium heat until fully cooked, breaking it up well.

Add onion, bell pepper, and garlic and cook 5–7 minutes, until softened and excess moisture is gone.

Stir in mushrooms and spinach, and cook 1–2 minutes, just until spinach wilts.

Remove from heat.

Divide into two portions

Split sausage mixture evenly between two small glass baking dishes.

Spread evenly.

Spoon ¼ cup pizza sauce over each dish.

Sprinkle pepperoni evenly.

Top each dish with ¾ cup mozzarella.

Cool completely

Let dishes cool on the counter.

Cover tightly and freeze.

Preheat oven to 350°F

Remove plastic lid (if any), and cover with foil

Bake 50–60 minutes

Remove foil for last 5–10 minutes if you want browning

Rest 5 minutes before serving
