I make this in 2 serving portions and freeze it.

Pizza Casserole

Ingredients

Pre-Prep

  1. Brown the sausage in a skillet over medium heat until fully cooked, breaking it up well.
  2. Add onion, bell pepper, and garlic and cook 5–7 minutes, until softened and excess moisture is gone.
  3. Stir in mushrooms and spinach, and cook 1–2 minutes, just until spinach wilts.
  4. Remove from heat.
  5. Divide into two portions
  6. Split sausage mixture evenly between two small glass baking dishes.
  7. Spread evenly.
  8. Spoon ¼ cup pizza sauce over each dish.
  9. Sprinkle pepperoni evenly.
  10. Top each dish with ¾ cup mozzarella.
  11. Cool completely
  12. Let dishes cool on the counter.
  13. Cover tightly and freeze.

From Frozen

  1. Preheat oven to 350°F
  2. Remove plastic lid (if any), and cover with foil
  3. Bake 50–60 minutes
  4. Remove foil for last 5–10 minutes if you want browning
  5. Rest 5 minutes before serving
  6. Dish is done when center is hot, cheese is fully melted, and edges are bubbling
