Instructions

  1. Drain soaked beans.
  2. Add beans, seasoning meat, water, onion, leek, and butter to pot.
  3. Bring to a gentle simmer.
  4. Cook 2–3 hours on low, stirring occasionally, until beans are very tender.
    (Alternatively, Slow cooker: 3 hours high or 6 hours low.)

  5. Remove bone (if used), shred any meat, and return it to the pot.

  6. Taste and add salt as needed.
