Season pork with salt & pepper

Heat olive oil & butter in a cast iron skillet over medium high heat

Add rosemary and thym to infuse the fat

Sear pork on all sides

Reduce heat to medium-low and pur in apple cider to deglaze

Scrape up goodies and cover loosely

Simmer until pork reaches 140

Remove and rest before slicing

Add butter and olive oil to the same pan

cook diced onion unil translucent

Add apples and saute 3-4 minutes

Add apple cider, cinnamon, nutmeg, and salt

Simmer until apples are just al dente and liquid reduces to a loose sauce

Adjust sweetness or salt to taste
