Excellent served over pasta, but also for chicken parmigiana, as sauce layers for lasagna, and sometimes, just eaten on top of garlic bread.
Pro Mom Tip: Need to get your kids to eat more veggies? Saute 1/2-1C shredded carrots or even broccoli chopped finely with the onions. Or stir in 2 cups of chopped baby spinach toward the end. The richness of the dish hides the veggies, but not the vitamins.
Saute peppers, onions and garlic in olive oil until onions are translucent. Be careful not to overcook because garlic burns easily.
If making meat sauce add ground beef and brown, stirring often to get the size of meat that you desire
Stir in tomato paste and water (or beef broth if making meatless)
Add tomatoes, mushrooms, and seasonings
Taste and add more seasoning as needed.
Just before serving stir in parmesan to thicken
Tip: If the sauce is too acidic add 1 T sugar to dial it back. This won't make your sauce sweet, just less acidic.
Serve over pasta, chicken, etc. My family likes angel hair.
