Use fingers to pull flour inward until you get a soft, slightly shaggy dough. You're looking for a sticky consistency, if it’s smooth: you went too far.
7 Flour your hands and pinch off dough, patting it into thick rounds. Consider that these aren't going to rise a ton, typically about half again.
8 Place touching in skillet, crowding slightly.
9 Bake 20–25 minutes at 350°F or until pale on top but done inside
10 Pop into the broiler for 1–3 minutes, watching carefully til they are patchy golden brown.
11 Dump out onto a plate
