Grandma Sue’s Biscuits
Ingredients
Instructions
-
Heat oven to 350°F
-
Grease a cast iron skillet generously.
-
Make a flour pile
-
Cut in butter using fingers or pastry cutter. Stop when it looks like small flakes + crumbs, not sand
-
Make a well and pour in milk gradually.
-
Use fingers to pull flour inward until you get a soft, slightly shaggy dough. You're looking for a sticky consistency, if it’s smooth: you went too far.
-
Flour your hands and pinch off dough, patting it into thick rounds. Consider that these aren't going to rise a ton, typically about half again.
-
Place touching in skillet, crowding slightly.
-
Bake 20–25 minutes at 350°F or until pale on top but done inside
-
Pop into the broiler for 1–3 minutes, watching carefully til they are patchy golden brown.
-
Dump out onto a plate
