Grandma Sue’s Biscuits

Ingredients

  1. Heat oven to 350°F
  2. Grease a cast iron skillet generously.
  3. Make a flour pile
  4. Cut in butter using fingers or pastry cutter. Stop when it looks like small flakes + crumbs, not sand
  5. Make a well and pour in milk gradually.
  6. Use fingers to pull flour inward until you get a soft, slightly shaggy dough. You're looking for a sticky consistency, if it’s smooth: you went too far.
  7. Flour your hands and pinch off dough, patting it into thick rounds. Consider that these aren't going to rise a ton, typically about half again.
  8. Place touching in skillet, crowding slightly.
  9. Bake 20–25 minutes at 350°F or until pale on top but done inside
  10. Pop into the broiler for 1–3 minutes, watching carefully til they are patchy golden brown.
  11. Dump out onto a plate
