  1. Preheat convection oven to 400
  2. Pat chicken dry with a paper towel
  3. Massage chicken with softened butter, and slide some under the skin where possible, make sure to get the wing tips well
  4. Season outside with salt, pepper, garlic, and italian seasoning
  5. Cut the vegetables small enough to fit inside cavity and place there with the remaining portion of the butter, and the fresh herbs
  6. Roast for 1.25 hours, or until temperature reads 160, basting from time to time with juices during the last half of cooking
  7. Allow chicken to rest for 15-20 minutes
