Chicken w/ Spinach & Sun Dried Tomatoes (Casserole)

Ingredients

Instructions

  1. Add olive oil, garlic, Italian seasoning, salt, pepper, and red pepper flakes to a bowl and whisk
  2. Add the chicken breasts and stir to coat
  3. Set aside for 10-15 minutes on the counter while you prep the remaining ingredients.
  4. Set oven to 400ºF
  5. Quickly wilt the spinach in a skillet with 1 tablespoon olive oil and set aside.
  6. Arrange chicken breasts drained from the marinade in a baking dish.
  7. Spread the softened cream cheese over the chicken breasts and lay spinach on top of the cream cheese.
  8. Finally, sprinkle mozzarella and sun dried tomatoes over the top.
  9. Bake for 20-30 minutes.
  10. Chicken casserole is done when cooked to an internal temperature of 165˚F .
