Drain soaked beans.

Add beans, seasoning meat, water, onion, leek, and butter to pot.

Bring to a gentle simmer.

Cook 2–3 hours on low, stirring occasionally, until beans are very tender.
(Alternatively, Slow cooker: 3 hours high or 6 hours low.) -
Remove bone (if used), shred any meat, and return it to the pot.

Taste and add salt as needed.
